  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion
  • 1 bell pepper
  • 3 cloves garlic
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the sausage, onion, and bell pepper until browned (about 5-7 minutes).
  3. Add the garlic and cook for an additional minute until fragrant.
  4. Mix in the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper; bring to a gentle boil.
  5. Incorporate the uncooked penne pasta; lower heat and let it simmer until tender (about 10-12 minutes), stirring occasionally.
  6. Finish by stirring in the grated Parmesan cheese until melted into the sauce.

Notes

Adjust the spiciness by varying the amount of Cajun seasoning. Leftovers can be stored in an airtight container for up to 3 days.
