A hearty and creamy one-pot pasta dish featuring smoky sausage and zesty Cajun spices, perfect for any weeknight meal.

  • 1 lb smoked sausage
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers invitingly.
  2. Add the sliced smoked sausage, chopped onion, and diced bell pepper. Sauté for about 5-7 minutes until the sausage is nicely browned, and the vegetables soften.
  3. Stir in the minced garlic, allowing it to cook for an additional minute.
  4. Add the diced tomatoes (with juice), chicken broth, heavy cream, Cajun seasoning, paprika, and a sprinkle of salt and pepper. Bring everything to a lively boil.
  5. Stir in the uncooked penne pasta and reduce the heat. Let it simmer on low, uncovered, until the pasta is tender, about 10-12 minutes.
  6. Remove the pot from heat and stir in the grated Parmesan cheese until melted and creamy.

Notes

For added spice, consider adding sliced jalapeños or a dash of hot sauce. Any pasta shape can be used in place of penne.
