A vibrant and zesty one pot lemon pasta dish that combines garlic, cherry tomatoes, and fresh spinach for a delightful meal.

Ingredients

  • 8 oz pasta (spaghetti or linguine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot and add minced garlic. Sauté until fragrant, about 1-2 minutes.
  2. Add the pasta, lemon zest, lemon juice, vegetable broth, and halved cherry tomatoes to the pot. Bring to a gentle boil.
  3. Reduce the heat and let it simmer, stirring occasionally, until the pasta is cooked al dente and the liquid is mostly absorbed—about 10-12 minutes.
  4. Stir in the spinach until wilted.
  5. Season the pasta with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese and fresh basil.
