A simple and comforting one pot pasta dish featuring garlic, sweet cherry tomatoes, and earthy spinach, perfect for a chilly evening.

Ingredients

  • 8 oz pasta (e.g., penne or fusilli)
  • 2 cups water or broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion and garlic until soft, stirring occasionally.
  3. Add the cherry tomatoes and cook for another 2-3 minutes.
  4. Combine the pasta, water or broth, and spinach into the pot.
  5. Bring the mixture to a boil, then reduce heat and let it simmer until the pasta is cooked, about 10-12 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped generously with grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth.
