A simple and comforting one pot pasta recipe that brings the joy of cooking with just a handful of quality ingredients.

Ingredients

  • 8 oz pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 onion, diced
  • 23 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Combine the pasta, vegetable broth, cherry tomatoes, onion, garlic, and Italian seasoning in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat and simmer, stirring occasionally, for about 10-12 minutes or until the pasta is cooked and the liquid is mostly absorbed.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
