A hearty and flavorful taco-inspired pasta dish cooked all in one pot, perfect for family dinners.

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup beef broth
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Brown the meat in a large pot over medium heat until nicely sautéed, and drain excess fat if needed.
  2. Add the taco seasoning, stirring well to coat the beef.
  3. Pour in the diced tomatoes with juices and beef broth, stirring to combine, bring to a simmer.
  4. Introduce the pasta, ensuring it’s submerged, and cook according to package instructions, stirring occasionally.
  5. Once the pasta is cooked, add black beans and corn, stirring to combine.
  6. Remove from heat and fold in the shredded cheese until melted.
  7. Serve hot with optional toppings like sour cream, green onions, and cilantro.

Notes

For a spicier version, add diced jalapeños or chili powder to taste. This dish can be made ahead and reheated easily.
