A comforting and hearty one pot meal combining savory beef, spicy taco seasoning, and cheesy goodness.

  • 8 oz pasta (spiral or penne)
  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef or chicken broth
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro or green onions for garnish

Instructions

  1. Brown the meat: In a large pot, brown the ground beef with the diced onion and minced garlic over medium heat until the meat is cooked through and the onions are tender. Drain excess fat.
  2. Sprinkle in the taco seasoning and stir for about a minute to awaken those delicious spices.
  3. Pour in the diced tomatoes, broth, and the uncooked pasta; stir everything together, ensuring the pasta is submerged.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 10-12 minutes, or until the pasta is al dente.
  5. Once the pasta is cooked, stir in the corn and shredded cheese, mixing until the cheese is melted and everything is heated through.
  6. Taste your creation and season with salt and pepper as desired.
  7. Serve the pasta hot, garnished with chopped cilantro or green onions for a fresh touch.
