  • 1/2 cup sugar
  • 1/4 cup honey
  • 1/4 cup butter, softened
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in honey, orange juice, orange zest, and grated ginger.
  4. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool before serving.
