Hearty roasted potatoes elevated by creamy baked feta and sweet garlic, offering a comforting and flavorful dish.

Ingredients

  • 2 pounds of baby potatoes, halved
  • 1 block (8 ounces) of feta cheese
  • 1 head of garlic, cloves separated and peeled
  • 1/4 cup of extra virgin olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Fresh parsley, chopped, for garnish
  • Optional: red pepper flakes for added heat

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the halved baby potatoes, extra virgin olive oil, dried oregano, salt, and black pepper in a large bowl. Toss well.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet. Add the whole cloves of garlic among the potatoes.
  4. Add the block of feta cheese in the center of the baking sheet.
  5. Roast for 25-30 minutes until potatoes are golden and feta is soft.
  6. Mash the baked feta cheese with garlic using a fork.
  7. Serve immediately, garnished with fresh chopped parsley and red pepper flakes if desired.

Notes

For a twist, try using different cheeses like goat cheese or sharp cheddar. Store leftovers in an airtight container for up to three days.
