Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the Parmesan cheese, breadcrumbs, garlic powder, dried Italian herbs, salt, and pepper in a shallow bowl.
  3. Beat the eggs until well combined in another bowl.
  4. Dip each chicken breast into the egg mixture and then into the breadcrumb-Parmesan mixture.
  5. Heat a drizzle of olive oil in a skillet over medium heat and sauté the coated chicken breasts until golden brown, about 3-4 minutes per side.
  6. Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  7. Serve hot and enjoy!

Notes

For an even crispier coating, double-dip your chicken in the egg and breadcrumbs. Fresh herbs like basil or parsley can enhance the flavor.
