Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (from a jar of pickles)
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the chicken by placing it in a shallow dish and covering it with dill pickle juice for 30 minutes to 2 hours.
  2. Prepare your dredging stations with flour mixed with spices, whisked eggs, and a mixture of breadcrumbs and Parmesan.
  3. Coat each chicken piece in flour, dip in eggs, and then press into the breadcrumb-Parmesan mixture.
  4. Heat about 1/2 inch of cooking oil in a large skillet over medium-high heat.
  5. Fry the chicken for 5–7 minutes per side until golden brown and cooked through.
  6. Drain the chicken on a wire rack and let it rest for a few minutes before serving.

Notes

For best results, marinate for the full 2 hours. If you have leftovers, store in an airtight container and reheat in an oven to maintain crispiness.
