A silky, creamy Pasta Carbonara recipe featuring guanciale and Parmesan, perfect for cozy nights.

Ingredients

  • Spaghetti or fettuccine pasta
  • 4 large Eggs
  • 1 cup grated Parmesan cheese
  • 6 ounces guanciale or pancetta
  • Freshly cracked black pepper, to taste
  • Salt, to taste

Instructions

  1. Cook the spaghetti or fettuccine according to the package instructions in a pot of boiling salted water.
  2. Whisk the eggs and add grated Parmesan cheese until smooth.
  3. Cook guanciale or pancetta in a skillet over medium heat until crispy.
  4. Reserve about one cup of pasta water before draining the pasta.
  5. Combine the hot pasta directly with the crispy guanciale in the skillet.
  6. Mix in the egg and cheese mixture off the heat while adding reserved pasta water gradually.
  7. Season with freshly cracked black pepper and salt to taste.
  8. Serve immediately, topped with extra grated Parmesan cheese.

Notes

For a vegetarian version, substitute with mushrooms or a plant-based bacon alternative. Add vegetables like peas or asparagus for extra nutrition.
