A warm and cozy peach-baked oatmeal that combines fluffy oats with sweet, juicy peaches, perfect for a heartfelt breakfast or snack.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk or plant-based milk
  • 2 ripe peaches, diced
  • 1/4 cup maple syrup or honey
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the milk, maple syrup (or honey), and vanilla extract in another bowl.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until combined.
  5. Add the diced peaches and nuts, and gently fold them into the mixture.
  6. Pour the mixture into a greased baking dish and spread evenly.
  7. Bake for 30-35 minutes or until the top is golden.
  8. Let cool slightly before serving.

Notes
