A comforting peach crisp that combines sweet and tart flavors with a delightful crunchy topping, embodying the joys of summer.

  • 6 cups fresh peaches, peeled and sliced
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon (plus 1/2 teaspoon for topping)
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Toss the peeled and sliced peaches with granulated sugar, lemon juice, cornstarch, and 1/2 teaspoon cinnamon until the peaches are evenly coated.
  3. Spread the peach mixture evenly into the prepared baking dish.
  4. Combine the rolled oats, all-purpose flour, brown sugar, 1/2 teaspoon cinnamon, and salt in a separate bowl.
  5. Incorporate the cold cubed butter until the mixture resembles coarse crumbs. Stir in the chopped pecans if using.
  6. Sprinkle the crumb topping evenly over the peach mixture.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  8. Allow to cool for about 10 minutes before serving, optionally with vanilla ice cream or whipped cream.

Notes

For best results, choose firm, ripe peaches. Adjust sugar levels based on peach sweetness.
