Delightful peanut butter balls enrobed in chocolate, perfect for sharing or satisfying cravings.

  • 1 cup creamy peanut butter
  • 4 tablespoons unsalted butter (softened)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar (sifted)
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening or coconut oil (for smooth dipping)

Instructions

  1. Prepare the Base: In a large mixing bowl, beat together the creamy peanut butter, softened butter, vanilla extract, and salt until smooth and creamy.
  2. Add the Powdered Sugar: Gradually stir in the sifted powdered sugar, about 1/2 cup at a time, until thick enough to roll into balls.
  3. Shape the Balls: Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Chill the Mixture: Refrigerate for at least 30–45 minutes to firm them up.
  5. Melt the Chocolate: Combine chocolate chips and shortening in a microwave-safe bowl, heating in intervals until smooth.
  6. Dip and Coat: Dip each chilled peanut butter ball into melted chocolate, tapping off excess, and return to the lined tray.
  7. Set and Store: Refrigerate the dipped peanut butter balls until the chocolate has hardened.

Notes

For smoother chocolate coating, add more shortening or coconut oil. Experiment with different types of chocolate for variety.
