Ingredients

  • 1/4 cup peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ginger, minced
  • 1 garlic clove, minced
  • 1/4 cup green onions, chopped
  • 1 cup shredded carrots
  • 1 head of lettuce (Boston or Butter lettuce works best)
  • Optional toppings: chopped peanuts, cilantro, lime wedges

Instructions

  1. Sauté the chicken in a skillet over medium heat until browned and fully cooked, about 7-10 minutes.
  2. Mix in the peanut butter, soy sauce, honey, ginger, and garlic, mixing well until combined.
  3. Add the green onions and carrots after removing the skillet from heat.
  4. Assemble your wraps by spooning the chicken mixture into lettuce leaves.
  5. Wrap the lettuce around the filling to enjoy your delicious wraps.
