Delicious and easy Pepperoni Pizza Quesadillas perfect for a weeknight dinner or game day snacks.

Ingredients

  • 8 count flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup sliced pepperoni
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Heat the skillet: Heat a large skillet over medium heat and brush one side of a tortilla with olive oil.
  2. Place the tortilla oil-side down in the skillet and spread 1 tablespoon of pizza sauce evenly on top.
  3. Sprinkle 1/4 cup of mozzarella on top, followed by a layer of pepperoni, a pinch of Italian seasoning, Parmesan, and basil.
  4. Top with a second tortilla and press gently with a spatula.
  5. Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  6. Carefully flip the quesadilla and cook another 2 to 3 minutes until golden and crispy.
  7. Remove from the skillet, let rest for a minute, then slice into wedges and serve immediately.

Notes

Serve with your favorite dipping sauces such as marinara or ranch dressing. Store leftovers in an airtight container in the fridge for up to 3 days.
