A delightful one-pan meal combining tender ribeye, sautéed peppers, and melted provolone cheese over fluffy rice.

Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups cooked rice
  • 1 cup provolone cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced onions, green bell peppers, and mushrooms to the skillet. Sauté until tender, about 5-7 minutes.
  3. Push the vegetables to one side of the skillet and add the thinly sliced steak. Cook until browned, about 3-5 minutes.
  4. Stir in the cooked rice and sprinkle with salt and pepper.
  5. Top with shredded provolone cheese, cover, and let it rest until melted.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month. Slice the steak thinly for better tenderness.
