A delightful dish combining sweet pineapple with tender chicken and fluffy rice, perfect for busy weeknights or weekend dinners.

Ingredients

  • 1 pound chicken breasts, diced
  • 1 cup pineapple chunks, fresh or canned
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Sauté the chopped onion and bell pepper in the skillet until softened.
  4. Stir in the pineapple chunks, soy sauce, salt, and pepper.
  5. Add the rice and chicken broth, bringing the mixture to a boil.
  6. Reduce heat and cover, letting it simmer for about 15-20 minutes, or until the rice is cooked and liquid is absorbed.
  7. Fluff with a fork and serve garnished with green onions.

Notes

For added flavor, marinate the chicken in soy sauce and a splash of pineapple juice for 30 minutes before cooking.
