A delightful blend of sweet pineapple and savory chicken, this one-pan meal is comforting and perfect for family gatherings.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup rice
  • 1 can pineapple chunks (with juice)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onions and garlic, sautéing until translucent.
  3. Add the chicken cubes and cook until browned.
  4. Stir in the diced bell pepper and cook for another 2-3 minutes.
  5. Add the rice, pineapple chunks with juice, and soy sauce, stirring to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions before serving.

Notes

For a spicy kick, add red pepper flakes. This dish can also be made ahead and stored in the fridge for up to 3 days.
