  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • Cherries for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your cake pan.
  2. Prepare the cake mix according to package instructions and fold in the undrained crushed pineapple.
  3. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  4. Beat the softened cream cheese and sugar until smooth for the frosting base.
  5. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Fold the whipped cream into the cream cheese mixture until combined.
  7. Spread the cream cheese frosting over the cooled cake.
  8. Sprinkle shredded coconut on top and garnish with cherries if desired. Chill before serving.
