  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries (optional)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter slowly in a round cake pan.
  3. Arrange the pineapple slices on the bottom of the pan.
  4. Mix the dry ingredients: flour, baking powder, and salt.
  5. Prepare the wet ingredients by beating sugar, eggs, milk, and vanilla together.
  6. Combine the wet ingredients with the dry ingredients until just mixed.
  7. Pour the batter over the arranged pineapples in the pan.
  8. Bake for 35-40 minutes, until a toothpick comes out clean.
  9. Cool for a few minutes and then invert onto a serving plate.

Notes

Serve warm with vanilla ice cream or whipped cream. Leftovers can be stored in an airtight container for up to 5 days.
