A nostalgic and delightful Pineapple Upside Down Cake featuring caramelized pineapple and a buttery, moist cake.

  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 1/2 cup of butter and pour it into a 9×13 inch pan.
  3. Arrange the pineapple slices over the brown sugar, and nestle a Maraschino cherry in the center of each slice.
  4. Mix together the flour, granulated sugar, baking powder, and salt in a large bowl.
  5. Combine the eggs, milk, and vanilla extract, and mix until smooth.
  6. Pour the batter evenly over the arranged pineapple and cherries.
  7. Bake in the preheated oven for 40-45 minutes until a toothpick comes out clean.
  8. Let the cake cool for a few minutes before inverting it onto a serving plate.

Notes

For a richer flavor, use dark brown sugar instead of light brown. Ensure your eggs and milk are at room temperature for a smoother batter.
