A flavorful and chewy vegan snack made from portobello mushrooms, marinated in a savory blend of soy sauce, olive oil, and spices.

  • 4 large portobello mushrooms
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 175°F (80°C).
  2. Clean the portobello mushrooms thoroughly under cool water and pat them dry.
  3. Slice the mushrooms into thin strips, about 1/4-inch thick.
  4. Whisk together soy sauce, olive oil, maple syrup, smoked paprika, garlic powder, onion powder, and black pepper in a bowl.
  5. Marinate the sliced mushrooms in the mixture for at least 30 minutes.
  6. Arrange the marinated mushroom strips on a lined baking sheet.
  7. Bake for 2-3 hours, flipping halfway through, until chewy.
  8. Cool completely on the baking sheet and store in an airtight container.

Notes

For deeper flavor, marinate mushrooms for up to 2 hours. Substitute with different mushrooms for variety.
