A creamy, plant-based cheese made from silken tofu, bursting with flavor from nutritional yeast and lemon juice.

Ingredients

  • 1 block of silken tofu
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder

Instructions

  1. Blend until smooth: In your blender, combine the silken tofu, nutritional yeast, lemon juice, garlic powder, salt, olive oil, and onion powder. Blend until the mixture is completely smooth.
  2. Cook the mixture: Pour the blended mixture into a saucepan and cook over medium heat. Stir continuously until the cheese thickens and starts to pull away from the sides.
  3. Transfer to mold: Carefully transfer your mixture into a mold or container. Pop it in the refrigerator, letting it cool until firm.
  4. Slice and serve: After your cheese has set, slice it into thick pieces, and serve it alongside your favorite crunchy crackers.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
