A comforting dish combining seared pork chops with a rich apple cider sauce, served over creamy mashed sweet potatoes.

  • 4 pork chops
  • 1 cup apple cider
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • Salt and pepper, to taste
  • 4 sweet potatoes
  • 2 tablespoons butter
  • ½ cup milk

Instructions

  1. Seasoning the pork chops: Generously season the pork chops with salt and pepper on both sides.
  2. Searing the pork: In a large skillet over medium-high heat, heat oil and sear the pork chops for about 3-4 minutes on each side until golden brown.
  3. Sautéing the aromatics: Remove pork from skillet, add onion and garlic, and sauté until translucent, about 2-3 minutes.
  4. Creating the sauce: Pour in the apple cider and add sage, stirring and bringing to a simmer. Return seared pork to the skillet.
  5. Simmering the pork: Cover and simmer for about 5-10 minutes until cooked through.
  6. Preparing the sweet potatoes: Peel and chop sweet potatoes, then cook in boiling water until tender, about 15-20 minutes.
  7. Mashing the sweet potatoes: Drain and mash sweet potatoes with butter, milk, salt, and pepper until creamy.
  8. Serving the dish: Serve pork on mashed sweet potatoes with sauce drizzled on top.

Notes

Use thin pork chops for quicker cooking and consider adding spices to the sweet potatoes for variation.
