A comforting and satisfying frittata packed with golden potatoes and savory sausage, perfect for brunch or a quick dinner.

Ingredients

  • 2 large potatoes
  • 1 pound sausage (Italian or your choice)
  • 6 large eggs
  • 1 cup milk
  • 1 onion, chopped
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and dice the potatoes, then boil in salted water until tender, about 10-15 minutes. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat and sauté the sausage until browned.
  4. Add the chopped onion and bell pepper to the skillet and sauté until tender.
  5. Whisk together the eggs, milk, salt, and pepper in a bowl, then fold in the cooked potatoes.
  6. Pour the egg mixture into the skillet with the sausage and vegetables and stir to combine.
  7. Cook on the stove for a few minutes until the edges start to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until set and lightly golden.
  9. Let it cool slightly, slice into wedges, and serve warm.
