A creamy and tangy potato salad perfect for warm-weather gatherings, evoking nostalgia and connection.

Ingredients

  • 2 pounds of potatoes
  • 1 cup of mayonnaise
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of Dijon mustard
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped onion
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and cool.
  2. Peel off the skins and cut the potatoes into bite-sized cubes.
  3. Mix together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper in a separate bowl.
  4. Add cubed potatoes, celery, and onion to the dressing and gently fold together.
  5. Chill in the refrigerator for at least 1 hour to allow flavors to meld.
  6. Garnish with chopped parsley before serving.
