A warm and comforting potato soup perfect for chilly nights, filled with creamy potatoes, sautéed onions, and garlic.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Chives for garnish (optional)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Sauté the chopped onion and garlic until translucent.
  3. Combine the diced potatoes and pour in the broth, bringing to a boil.
  4. Simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Puree the soup with an immersion blender to your desired consistency.
  6. Stir in the milk or cream, and add salt and pepper to taste.
  7. Serve hot, garnished with chives if desired.
