A warm and comforting noodle bowl inspired by potstickers, featuring tender Lo Mein noodles, savory ground pork, and a vibrant medley of vegetables.

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Start by cooking the Lo Mein noodles according to the package instructions. Once they’re tender, drain and rinse them under cold water to prevent sticking. Set aside while you prepare the rest of your ingredients.
  2. In a large skillet, heat the peanut oil over medium-high heat. Add the ground pork along with 1/4 cup of the sliced green onions. Sauté until the pork is browned and cooked through, about 5–7 minutes.
  3. In a separate bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
  4. Add the cooked noodles, coleslaw mix, and the prepared sauce into the skillet with the browned pork. Toss everything gently to ensure that the noodles and vegetables are well-coated. Cook for an additional 2-3 minutes.
  5. To finish, garnish with the remaining sliced green onions. Serve warm, with extra sriracha on the side if you like a little heat!

Notes

For the best noodles, rinse in cold water after boiling. Adjust sriracha for desired spice level.
