A vibrant twist on classic burritos, this protein-packed casserole is layered with tender chicken, black beans, corn, salsa, and melted cheese, making it a delicious and cozy weeknight meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips or additional tortillas (optional for layering)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the shredded chicken, cooked rice, drained black beans, corn, salsa, cumin, chili powder, salt, and pepper in a large mixing bowl.
  3. Grease a baking dish and layer half of the mixture evenly in the bottom.
  4. Sprinkle half of the shredded cheese over the mixture.
  5. Repeat with the remaining mixture.
  6. Top with the rest of the cheese.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  8. Let the casserole cool for a few minutes before serving.
