  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes, pierce them with a fork, and bake for about 40-50 minutes, or until tender.
  3. In a skillet, heat olive oil over medium heat. Add ground turkey, garlic powder, cumin, salt, and pepper; cook until browned.
  4. Stir in black beans and heat through until warm.
  5. Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork.
  6. Fill the sweet potato boats with the turkey and black bean mixture.
  7. Top with shredded cheese and return to the oven to melt the cheese, about 5-10 minutes.
  8. Garnish with chopped green onions and serve warm.
