A wholesome and delicious breakfast bake packed with protein and flavor, perfect for busy mornings.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup oats (gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup fresh blueberries
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Mix the cottage cheese, oats, honey or maple syrup, eggs, vanilla extract, baking powder, cinnamon, and salt in a large bowl until smooth and well combined.
  3. Incorporate the fresh blueberries, gently folding them in to evenly distribute.
  4. Pour the mixture into the greased baking dish and spread it evenly.
  5. Bake for 25-30 minutes, until golden brown and a toothpick inserted comes out clean.
  6. Cool slightly before cutting into squares and serving warm.

Notes

Serve with Greek yogurt or a drizzle of honey, and store any leftovers in an airtight container for up to 3 days.
