A delightful low-carb, high-protein cloud bread infused with juicy blueberries, perfect for breakfast or a guilt-free snack.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup blueberries
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Sweetener to taste (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese and eggs in a mixing bowl until smooth.
  3. Add the almond flour, baking powder, vanilla extract, and sweetener (if using) to the mixture, blending until well combined.
  4. Fold in the blueberries, taking care not to burst them.
  5. Spoon the mixture onto the prepared baking sheet in dollops.
  6. Bake for 20-25 minutes, or until golden brown and fluffy.
  7. Let cool slightly before serving.

Notes

Enjoy with a drizzle of honey or Greek yogurt. Store in an airtight container at room temperature for 2 days, in the refrigerator for a week, or freeze for 3 months.
