Deliciously nutritious muffins packed with cottage cheese and bursting with blueberries, perfect for breakfast or as a snack.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the cottage cheese, eggs, honey, and vanilla extract in a mixing bowl until smooth.
  3. Combine the whole wheat flour, baking powder, baking soda, and salt in another bowl.
  4. Unite the dry ingredients with the wet ingredients, mixing gently until just combined.
  5. Fold in the blueberries gently.
  6. Fill the muffin cups evenly with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool slightly in the tin before transferring to a wire rack.
