  • 4 hard-boiled eggs
  • 1 cup nuts (your choice: almonds, walnuts, or mixed nuts)
  • 1 cup Greek yogurt
  • 1 cup cheese cubes (cheddar or mozzarella)
  • 1 cup hummus
  • 2 cups vegetable sticks (carrots, cucumber, and bell peppers)
  • 2 protein bars

Instructions

  1. Boil the eggs: Bring a pot of water to a boil and add your eggs. Let them cook for about 10-12 minutes for that perfect, hard-boiled consistency. Once done, transfer them to an ice bath to cool before peeling.
  2. Cube the cheese: While the eggs cool, take your cheese and cut it into bite-sized cubes for easy grab-and-go options.
  3. Slice the veggies: Slice up your carrots, bell peppers, and cucumber into easy-to-dip sticks that pair beautifully with your hummus.
  4. Assemble your snack box: Grab your favorite lunchbox or container and start arranging your ingredients. Place the hard-boiled eggs on one side, the cheese cubes nestled next to them, and add the crunchy vegetable sticks. Include a small container of hummus for dipping, a scoop of Greek yogurt, and finish with a few nuts for crunch.
