A delightful fusion of moist bananas and sweet carrots, spiced with cinnamon, perfect for breakfast or a snack.

  • 1 cup grated carrots
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Combine the mashed bananas, grated carrots, sugar, vegetable oil, eggs, and vanilla extract until well mixed.
  3. Mix together the all-purpose flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. Add the chopped walnuts or pecans, if using.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
