A quick and satisfying stir fry featuring crispy potstickers and fresh vegetables, perfect for busy weeknights.

  • 1 package Frozen Potstickers/Gyoza
  • 1/4 cup Water (for steaming)
  • 8 oz White Button Mushrooms (or shiitake/baby bella)
  • 2 cups Broccoli Florets
  • 1 cup Green Beans (or asparagus/sugar snap peas)
  • 1 large Carrot (shredded)
  • 1 medium Onion (red onion is a good alternative)
  • 1 tbsp Sesame Oil (or vegetable/olive oil)
  • 1 tbsp Extra Virgin Olive Oil (or avocado oil)
  • 3 tbsp Soy Sauce (Reduced-Sodium) (or tamari for gluten-free)
  • 1 tbsp Rice Wine Vinegar (or apple cider vinegar)
  • 1 tbsp Sugar/Honey (or agave syrup)
  • 1 tsp Fresh Ginger (Grated) (or ground ginger)
  • 1 tbsp Cornstarch (or arrowroot powder)
  • 2 tbsp Cold Water (for slurry)

Instructions

  1. Prepare Your Ingredients: Start by gathering all your ingredients. Chop the mushrooms, broccoli, and green beans to your desired size. Shred the carrot and slice the onion thinly.
  2. Sauté Your Aromatics: In a large skillet or wok, heat the sesame oil and olive oil over medium heat. Add the sliced onion and sauté for 2-3 minutes until they become translucent.
  3. Add the Vegetables: Toss in your mushrooms, broccoli florets, green beans, and shredded carrot into the skillet. Stir-fry for about 5 minutes or until the vegetables are tender yet still crisp.
  4. Steam the Potstickers: Create space in the skillet by pushing the veggies to one side. Place the frozen potstickers in the other side and pour 1/4 cup of water over them. Cover with a lid and let them steam for about 5 minutes.
  5. Create the Flavorful Sauce: In a small bowl, combine the soy sauce, rice wine vinegar, sugar (or honey), and grated ginger. In another bowl, whisk together the cornstarch and cold water to create a slurry, then add it to the sauce mixture.
  6. Combine All Together: Once the potstickers are done steaming, uncover the skillet. Pour the sauce over the potstickers and vegetables, stirring gently. Let it cook for another 2-3 minutes until the sauce thickens.
  7. Serve and Enjoy: Plate your Quick Potsticker Stir Fry, garnishing with sesame seeds or sliced green onions. Serve hot.

Notes

Pairs well with jasmine rice or quinoa. Store leftovers in an airtight container in the fridge for about 3 days.
