A vibrant and nutritious quinoa salad packed with colorful vegetables and a tangy dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. Combine the rinsed quinoa and water or vegetable broth in a pot. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy and the liquid is absorbed.
  3. Cool the quinoa by removing it from heat and spreading it out on a platter.
  4. Combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese in a large bowl.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl until well combined.
  6. Dress the salad by pouring the dressing over it and tossing gently to combine.
  7. Serve the salad cold or at room temperature.

Notes

For meal prep, store leftovers in an airtight container for up to 3 days. The flavors will intensify over time.
