A delightful summer dessert combining tangy lemon flavor and fresh raspberries for a refreshing treat.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the all-purpose flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press this mixture into the bottom of the prepared pan.
  4. Bake the crust for about 15 minutes, or until it’s lightly golden.
  5. Mix together the fresh raspberries, granulated sugar, eggs, lemon juice, lemon zest, and baking powder in another bowl.
  6. Pour the raspberry mixture over the baked crust, spreading it evenly.
  7. Bake for an additional 20-25 minutes until the bars are set.
  8. Let the bars cool completely in the pan and dust with powdered sugar before cutting them into squares.

Notes

Use fresh raspberries for the best flavor, or substitute with other berries. Store leftovers in an airtight container in the refrigerator for up to one week.
