Delightful Red Velvet Cheesecake Bites that combine the flavors of red velvet cake with creamy cheesecake filling, perfect for parties or a sweet treat.

Ingredients

  • 1 cup red velvet cake mix
  • 1/4 cup vegetable oil
  • 1 large egg
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips (optional)
  • White chocolate for drizzling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. Mix together the red velvet cake mix, vegetable oil, and egg in a bowl until well combined.
  3. Scoop the mixture into the mini muffin tin, filling each liner about halfway.
  4. Beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Drop a small spoonful of the cream cheese mixture on top of each red velvet batter in the muffin tin.
  6. Sprinkle chocolate chips on top if desired.
  7. Bake for 12-15 minutes, or until set.
  8. Cool completely before drizzling with melted white chocolate, if desired.
