Delightful Red Velvet Cookie Bars topped with creamy frosting, perfect for celebrations or a cozy treat.

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chips
  • 1 cup cream cheese frosting (store-bought or homemade, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or line with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, adding vanilla extract and red food coloring after mixing.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the white chocolate chips gently with a spatula.
  7. Pour the cookie dough into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Remove from the oven and cool for 10-15 minutes before transferring to a wire rack.
  10. Spread the cream cheese frosting evenly on top of the cooled cookie bars.
  11. Cut into squares and serve, or store in an airtight container.

Store in an airtight container at room temperature for up to 5 days, or refrigerate for a week. Freeze for extended storage.
