  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • Cream cheese frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Combine the flour, sugar, baking soda, salt, and cocoa powder in a large mixing bowl.
  3. Mix together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
  4. Combine the dry ingredients with the wet mixture, stirring gently until just mixed.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool completely and frost each cupcake with cream cheese frosting.

Notes
