  • 2 large eggs
  • 1 egg yolk

  • 1 teaspoon red food coloring
  • 1/2 cup bittersweet chocolate, chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and butter four ramekins.
  2. In a microwave-safe bowl, melt the butter and chopped chocolate together, stirring until smooth.
  3. In a mixing bowl, whisk together the sugar, eggs, and egg yolk until pale and thick.
  4. Stir in the melted chocolate mixture and vanilla extract, then fold in the red food coloring.
  5. Sift together the flour, cocoa powder, baking powder, and salt, then fold into the wet ingredients until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12-14 minutes, until the edges are set but the center is still soft.
  8. Let the cakes cool for 1 minute, then invert onto plates.
