A fluffy and vibrant poke cake filled with strawberry and blueberry flavors, perfect for summer celebrations.

Ingredients

  • 1 box of white cake mix
  • 3 large eggs
  • 1 cup of water
  • 1 1/4 cups of sweetened condensed milk
  • 1 cup of strawberry Jell-O
  • 1 cup of blueberry Jell-O
  • 1 cup of whipped topping
  • Fresh strawberries and blueberries for garnish

Instructions

  1. Preheat the oven as per cake mix instructions and prepare a 9×13 inch baking dish.
  2. Mix the white cake mix, eggs, and water as per the package instructions and pour into the prepared dish.
  3. Bake according to package directions and then let it cool.
  4. Poke holes all over the cake with a fork, allowing the vibrant Jell-O to seep in.
  5. Prepare the strawberry Jell-O according to package instructions and pour over the cake, filling the holes.
  6. Add the blueberry Jell-O, pouring it over the cake as well, creating a colorful marbling effect.
  7. Chill for at least 120 minutes to let it set, allowing all those flavors to meld beautifully.
  8. Whip the whipped topping over the cake and garnish with fresh strawberries and blueberries.
  9. Serve chilled and enjoy the sweet, fruity flavors in each bite!

Notes

Leftover poke cake can be covered and stored in the refrigerator for up to 3 days.
