  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the chopped cauliflower with olive oil, cumin, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the cauliflower evenly on a baking sheet and roast for 25-30 minutes, or until golden and tender.
  4. Warm the tortillas in a skillet or directly on an open flame until soft and pliable.
  5. Assemble the tacos by placing some roasted cauliflower in each tortilla and topping with fresh cilantro, sliced avocado, and feta cheese, if desired.
  6. Serve with lime wedges on the side for extra freshness.
