A simple yet classic roasted chicken recipe with garlic, herbs, and lemon, perfect for gatherings.

Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 garlic cloves, minced
  • 1 lemon, quartered
  • Fresh herbs (thyme, rosemary, or parsley)
  • Vegetables (carrots, potatoes, onions) for roasting

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse and dry the chicken under cold water.
  3. Rub with olive oil and season generously with salt, pepper, and minced garlic.
  4. Stuff the chicken cavity with lemon quarters and fresh herbs.
  5. Prepare the roasting pan by arranging vegetables around the chicken.
  6. Roast for about 1 hour and 15 minutes, until the internal temperature reaches 165°F (75°C).
  7. Rest the chicken for 10-15 minutes before carving.

Notes

Serve with vegetables from the roasting pan and a crisp salad or warm bread. Store leftovers in an airtight container for up to 3 days.
