A vibrant and zesty Roasted Corn Salsa that bursts with flavor, perfect for summer gatherings.

Ingredients

  • 4 cups corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the corn on a baking sheet in a single layer. Roast for 20-25 minutes, or until lightly browned.
  3. Combine the roasted corn, diced red bell pepper, red onion, minced jalapeño, and chopped cilantro in a large mixing bowl.
  4. Add the lime juice over the mixture and stir, then season with salt and pepper to taste.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For a milder salsa, reduce or omit the jalapeño. Fresh corn is great, but frozen works too.
