A delightful side dish of tender smashed carrots roasted with honey and garlic, perfect for any meal.

  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them in half lengthwise.
  3. Place the carrots on a baking sheet, spreading them out.
  4. In a small bowl, mix together the olive oil, honey, minced garlic, salt, and pepper.
  5. Pour the mixture over the carrots and toss to coat them evenly.
  6. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
  7. Remove from the oven and gently smash each carrot with a fork.
  8. Garnish with fresh parsley if desired before serving.
