A vibrant and comforting orzo salad bursting with roasted vegetables and a tangy balsamic dressing.

Ingredients

  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, red onion)
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the mixed vegetables with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes until tender.
  3. Meanwhile, cook the orzo according to package instructions. Drain and set aside.
  4. In a small bowl, whisk together the balsamic vinegar and honey (or maple syrup) until well combined.
  5. In a large bowl, combine the cooked orzo, roasted vegetables, and balsamic dressing. Mix well until everything is evenly coated.
  6. Garnish with fresh herbs before serving. Enjoy!
